Veg Manchow Soup
Ingredients:
5 pods of garlic.
1 small knob of ginger.
4 green chillies.
1 small onion.
Spring onions.
2 medium carrots.
Half of a medium cabbage.
8-10 mushrooms of any kind.
12-15 green beans.
3 Tbsp of black soy sauce.
1/2 Tbsp of white vinegar.
1/2 Tbsp of pepper.
1 Tbsp of ketchup.
1 Tbsp of hot sauce
Noodles* if you like.
2 Tbsp of Corn flour.
Onion powder*
Garlic powder*
Method:
In a hot wok, add 2 Tbsp of any veg oil, the finely chopped garlic and ginger. Saute for a bit and add the slices of onions, a pinch of salt and the finely chopped green chillies.
After sauteing, add the diced carrots and beans along with the roughly chopped mushrooms and the shredded cabbage. Add the req amount of salt and cook for about 2-3 mins. Then add the soy sauce, vinegar, pepper, hot sauce and ketchup. Cook it off for a minute and then add 2 cups of water or more for the req consistency.
In a cup stir the cornflour with 2 Tbsp of water and set aside.
Once the soup comes to a boil add the cornflour slurry and stir well. Bring it to a boil and garnish with a few thinly sliced spring onions.
Fried noodles:
Boil 3 cups of water with a generous amount of salt and boil the Hakka noodles for about 1-2 mins. Strain the water and rinse them with cold water. Dry the noodles on a cloth and coat them with 2-3 Tbsp of cornflour. Fry them off in some oil till they turn golden in colour.
Let them cool and add 1 tsp of garlic powder and 1 tsp of onion powder with 1/4 tsp of pepper, toss the noodles in the powders.
Serve the soup with the fried noodles on top.
