Paneer Butter Masala!


Ingredients:
4 medium tomatoes.
2 medium onions.
200g-300g paneer/cottage cheese.
2 pods of elaichi/cardamom.
1 piece of cinnamon.
2 tsp ginger garlic paste.
2 red chillies.
1 bay leaf.
2 tsp cumin/jeera seeds.
1/4 tsp turmeric powder.
3 Tbsp Kashmiri red chilli powder.
Pinch of coriander powder.
1/2 tsp garam masala.
1 Tbsp kasuri methi.
1 Tbsp fresh coriander leaves.
3 Tbsp of fresh cream.
Pinch of Sugar.
1/4 cup of cashews.
4 Tbsp oil.
5 Tbsp butter.
3 Tbsp ghee.

Method:
1) To a non stick flat pan add 1 Tbsp oil, 1 Tbsp ghee and 1 Tbsp butter and heat it up a little. Then decrease the flame and add 1 Tbsp red chilly powder, a pinch of salt and the turmeric powder.
Then place the cubes of paneer and let them get a very slight colour on all sides.
NOTE: Make sure to not fry them on neither high heat nor for a long time as they tend to get rubbery very fast!
Once done, set aside!

2) To another hot pan/dish add 1 Tbsp of oil and 1 Tbsp of ghee. Heat it up and add the elaichi, cinnamon, cumin seeds, dried red chillies with the ends cut, ginger garlic paste and the bay leaf. Stir them around and then add the roughly chopped onions with a pinch of salt and cook off for a minute. Add the cashews and the roughly chopped tomatoes with a pinch of salt and mash the tomatoes a little. Continue to cook until you can visibly see some of the oil seperating and the tomatoes have cookes well.
Take it off heat and add 8 ice cubes or 1/2 cup cold water and stir around to cool.

3) Remove all the spices from the cooked mixture and DO NOT blend them!
Add the cooked mixture to a blender and form a nice puree which is pourable but not too thin!
To a cold pan, add 2 Tbsp butter, 1 Tbsp oil, 2 Tbsp chilli powder, the coriander powder and stir it around.  Bring it up to a heat and then add the puree. Stir well and bring it up to boil. Then cook on simmer for 10 minutes or so or until you can taste that it's cooked. Then add the kasuri methi, a pinch of sugar, coriander leaves, garam masala and stir it well. Finally taste for salt and add 3 Tbsp of fresh cream and turn off the heat. Just five minutes before serving, pour it into a bowl, add the paneer, pour  a little fresh cream on the top, add 1 Tbsp of butter and garnish with a little kasuri methi and coriander leaves!
