Fried rice
Ingredients:
1 and a 1/2 cup basmati rice.
3 green chillies.
1 medium sized carrot.
8 green beans.
1/4th of a cabbage.
Any vegetable oil.
8 cloves of garlic.
2 tsp lime juice.
A handful of chopped scallions/spring onions.
1 medium sized onion.
1 Tbsp hot sauce.
2 tsp pepper.
2 Tbsp of dark soy sauce.
1 tsp of vinegar.
Method:
Soak the rice in some water for 20 minutes.
While the rice soaks, get your veggies all chopped up to very fine pieces. Reserve about a Tbsp of the scallions in a separate bowl.
To a pot, add the drained rice, 1 Tbsp of oil, the lime juice, the req salt and 3 cups of water. Bring it to a boil and let the rice cook. The rice should be slightly undercooked or aldente but not too undercooked. You can check by tasting it or if the rice breaks apart into many tiny bits , it's probably undercooked. It should mash up a little when pressed.
Drain the rice once it's cooked and spread it out onto a plate. This will help the rice grains to seperate up as the steam escapes!
To a wok, add 3 Tbsp of oil, the finely chopped garlic, onions and green chillies with a pinch of salt. Stir them around and don't let anything brown. We're just going for a light cook. Add the finely chopped carrots, beans, cabbage and the spring onions. Add a pinch of salt and cook them on high heat only for like 2 minutes or so or until they have a nice crunch to them. Add the pepper powder, the hot sauce and stir well. Next add in the rice, the soy sauce, a sprinkle of water and the vinegar. Gently stir them all together almost like folding it in (this is done to avoid breakage of the rice). Make sure the rice is cooked well, if it isn't then you can sprinkle some water over it and cover it with a lid on low flame for a while. Taste for salt and garnish with a few of the reserved scallions.
