Roti Pizza!
Ingredients:
3 rotis/chappathis (Preferably 1 day old)
4 medium tomatoes(less sour ones).
4 cloves of garlic.
1 medium onion.
1 small capsicum.
Few mushrooms of any kind.
3 tsp of cheese spread.
1 Tbsp of oil.
Mozzarella cheese or any other cheese that melts well.
Method:
Boil hot water, take it off heat and place the tomatoes in. Slit them around and then place so they can be easily peeled.
Let it sit in the water for 3-4 mins and then remove the skins from them.
Puree them and add them into a dish on medium heat. Add some salt, a sprinkle of sugar, ONLY SMASHED garlic cloves, do not chop them up. Let it come to a boil and bring to a simmer. Let it reduce to a somewhat thick paste and let it completely cool. Remove the garlic cloves and let rest.
Saute all the veggies with a little bit of salt just to start off the process. Saute only for a short time and use less oil.
Apply 1 tsp of cheese spread on each roti.
Spread a heaping tablespoon of the tomato sauce, place the veggies and add some cheese on the top.
Bake at high setting until the cheese melts and it gets golden on the top!
