Choco Chip Banana muffins ๐Ÿซ๐Ÿฅ




Choco chip banana muffins:
Ingredients:
Makes 12.
1 cup choco chips.
2 1/4 cup a.p flour.
1 Tbsp baking soda.
2 medium eggs.
1 1/2 tsp vanilla extract.
1 tsp baking Powder.
1/2 cup white sugar.
1/2 cup dark brown sugar.
1 tsp of salt.
A pinch of cinnamon powder.
1 1/2 Tbsp cocoa powder.
2 very ripe bananas.
1/3 cup milk.
1/3 cup neutral oil.

Method:
To one large bowl, add the flour, baking powder, salt, baking soda, 3/4 cup choco chips, cinnamon powder, cocoa powder and stir well.
To another large bowl, add the sugars and the oil. Whisk well until well incorporated and then add 2 whole eggs, mashed bananas and the vanilla extract.
Add in the milk and beat well, then add 1/2 of the flour mixture and ONLY STIR UNTIL COMBINED!
Then add the remaining flour and again only fold until combined!
DO NOT OVER MIX!
Cover the bowl with plastic wrap and place it in the fridge for 30 mins.
In the meantime preheat your oven to 215 degree celcius and coat your muffin pan lightly with oil.
After 1/2 hour, fill your muffin tins almost to the brim, and top them with the remaining choco chips and place it in the preheated oven at 215 for 5 mins. Then decrease the temperature to 185 and bake for 10-15 mins more and until a toothpick inserted into the centre comes out clean!
Remove the pan from the oven and let rest for 5 minutes then lightly scrape the edges and gently remove the muffins and place them on a rack to cool!
