Vegetable Kathi Roll
Kathi roll is a widely known street food in India, originated in Kolkata, West Bengal. Best made when friends and family are around! Try out this recipe of Kathi roll with a twist and be wowed by its masaley goodness!
Ingredients:
6 frozen parottas (check the recipe on the blog for homemade parottas)
2 medium carrots.
1 medium green bell pepper/capsicum.
A few small florets of cauliflower.
8 medium green beans.
A bunch of green peas.
A bunch of corn.
1 medium or 2 small tomatoes.
4 medium potatoes.
2 medium onions.
3 green chillies.
A bunch of fresh corainader leaves.
2 lemons.
A handful of cashew nuts.
Turmeric powder, dried coriander powder, red chilli powder, cumin powder, garam masala.
Oregano.
Red chilly flakes.
Ghee*
Prep:
-Wash the potatoes and pressure cook them for about 5 whistles and let it naturally de-pressurize.
-Chop 1 onion to fine slices and add 1 Tbsp of lime juice to it.
-Grind the cashew nuts with a tablespoon of water to a fine paste.
-Grind 2 onions, 3 green chillies and bunch of fresh coriander leaves to a paste.
-Dice the tomatoes.
-Chop up the carrots, bell pepper into thin matchsticks.
-Using your hands, break the florets of cauliflower into even smaller florets.
-Chop up the geenn beans.
-Soak the green peas and corn in some water.
Method:
Mash the peeled potatoes pretty well, small lumps are fine.
In a hot wok, add 2 Tbsp of oil, and add in the onion chilly coriander paste with the required amount of salt. Cook it off until all the water has been evaporated and it's lost its fresh green colour. Add in half of the carrot matchsticks, bell peppers, tomatoes and beans. Add the required amounto of salt and spritzes of water, while cooking them off with a closed lid.
Add 1/2 tsp of turmeric powder, 1 tsp of red chilli powder, 2 tsp of coriander powder, 1/2 tsp of pepper powder, 1/2 tsp of cumin powder, 1/2 tsp of garam masala and cook off the masalas with spritzes of water if required.
Add in the mashed potatoes and stir all the veggies together.
To the cashew nuts paste, add the hot sauce, a little lemon juice and add it to the masala!
Taste the masala for salt and set it aside to cool.
To a hot pan, heat one parotta till it's golden brown. Take it off heat, add the masala, a few carrot matchsticks, a few slices of onions, a crack of pepper and roll the parotta up.
If you want you can heat the rolls up on a pan with a covered lid for extra crispiness.
Serve with lemon wedges and more spices onions!
