The Best Pancakes!
Blood is thicker than water, but maple syrup is thicker than blood! So technically pancakes with maple syrup are more important than family!😂
WE ALL LOVE PANCAKES! And if you don't like them, you just haven't had good ones yet!
This recipe will make you love pancakes even more than ever!
PS: I didnt even know that was possible.
Ingredients:
2 and a 1/2 cups all purpose flour.
2 Tbsp salt.
3 Tbsp sugar.
2 tsp baking powder.
2 tsp baking soda.
2 eggs.
2 and a 1/2 cup Buttermilk or:
2 and a 1/2 cups whole milk and 2 Tbsp lime juice.
2 tsp vanilla extract.
1 stick of butter (1/2 cup or 115 g).
Dry Ingredients:
To a bowl, add the flour sifted, baking powder, baking soda, sugar and salt. Whisk them together.
Wet ingredients:
For buttermilk: If you don't have buttermilk, add 2-3 Tbsp of lime juice or vinegar to the whole milk and let sit for about 10-20 mins, until they curdle up a little!
To a large bowl, add the buttermilk, melted butter and 2 egg yolks seperated.
Stir this together and add in the dry ingredients!
ONLY STIR TO COMBINE WITH A RUBBER SPATULA! An overbeaten mixture will result in flat pancakes! It's okay if there are medium sized lumps.
Add the egg whites and only gently stir them to combine the egg whites. It's good if there are little lumps of unbeaten flour!
Let the batter sit for 20-30 minutes.
Keep a cast iron pan on the stove at medium heat and add a tablespoon of butter with a few drops of vegetable oil!
This is to increase the buring point of the butter.
Use a large enough ladle to scoop up about a heaping 1/3rd cup of the batter and drop it onto the hot pan.
This is when you can customize your pancakes, add berries or chocolate chips or really anything of your choice!
Once you see bubbles on the top, you can flip it over and cook until it's golden brown,
Pile the pancakes over each other when hot, place a tablespoon of butter on top and pour over a generous amount of maple syrup!
