Kolkata Style - Egg Roll
Oh! This egg roll is such an amazing way to enjoy your favourite parotta! This Kolkata style hybrid recipe does involve a South Indian Parotta and it just makes this dish so much better. Best made when in company and it can be easily prepped earlier for a hassle free cook!
Ingredients:
3 eggs.
Frozen parathas (check the blog for the recipe of the homemade parottas)
2 onions.
Ghee*
Vegetable oil.
Fresh coriander leaves.
Chat masala.
Mayonnaise.
Green chillies.
Chilly powder.
Chilli flakes.
3 lemons.
Method:
Slice up the onions into thin slices and stir them together with lemon juice.
To a hot pan, place a parotta and heat till it's golden brown. In the meantime, beat one egg with a pinch of salt.
Remove the parotta, tilt the pan a little and add in the beaten egg. Immediately, place the parotta over the egg and make sure it covers all the egg.
Add a little ghee or oil here and there, to cook the egg well.
Repeat for all three parottas.
To a bowl add some mayo, 1 tsp of chilli powder, green chilli slices, 1 Tbsp of lemon juice and stir it together.
Place the three parootas, egg side up on a surface.
Add the onions, coriander leaves, pepper powder, chat masala, dollops of chilli mayo and a sprinkle of chilli flakes in one vertical line.
Roll up the parotta and heat again for extra crispiness.
Serve hot with lemon wedges, cucumber slices and more onions!
