Kolkata Style - Egg Roll

Oh! This egg roll is such an amazing way to enjoy your favourite parotta! This Kolkata style hybrid recipe does involve a South Indian Parotta and it just makes this dish so much better. Best made when in company and it can be easily prepped earlier for a hassle free cook! Ingredients: 3 eggs. Frozen parathas (check the blog for the recipe of the homemade parottas) 2 onions. Ghee* Vegetable oil. Fresh coriander leaves. Chat masala. Mayonnaise. Green chillies. Chilly powder. Chilli flakes. 3 lemons. Method:  Slice up the onions into thin slices and stir them together with lemon juice. To a hot pan, place a parotta and heat till it's golden brown. In the meantime, beat one egg with a pinch of salt. Remove the parotta, tilt the pan a little and add in the beaten egg. Immediately, place the parotta over the egg and make sure it covers all the egg. Add a little ghee or oil here and there, to cook the egg well. Repeat for all three parottas. To a  bowl add

Vegetable Kathi Roll

Kathi roll is a widely known street food in India, originated in Kolkata, West Bengal. Best made when friends and family are around! Try out this recipe of Kathi roll with a twist and be wowed by its masaley goodness! Ingredients:  6 frozen parottas (check the recipe on the blog for homemade parottas) 2 medium carrots. 1 medium green bell pepper/capsicum. A few small florets of cauliflower. 8 medium green beans. A bunch of green peas. A bunch of corn. 1 medium or 2 small tomatoes. 4 medium potatoes. 2 medium onions. 3 green chillies. A bunch of fresh corainader leaves. 2 lemons. A handful of cashew nuts. Turmeric powder, dried coriander powder, red chilli powder, cumin powder, garam masala. Oregano. Red chilly flakes. The Classic flaky Parotta/Paratha

Parotta: Also known as a layered flatbread, this classic flaky parotta is popular in southern India! Best served with mutton, chicken or even vegetable kuruma, parotta is available in almost every south indian restaurant and is widely popular in Kerala and Tamil Nadu! Ingredients: 2 and a 1/2 cups (500g) All purpose flour. 1/4 (50g) cup semolina. 3 Tbsp sugar. 2 Tbsp salt. Ghee. Vegetable oil. Luke warm water. Method: In a large bowl, add the flour, semolina, salt, sugar and stir them together. Add spritzes of luke warm water as required and knead the dough. Essentially, the dough must neither be too dry nor too wet! Knead this dough for about 15-20 minutes, until you get a smooth/elasticy dough. Once you're done, pour 3 Tbsp of oil over the dough and coat evenly. Set the dough away to rest for at least 15 minutes. Stir in 2 Tbsp of ghee with any vegetable oil and set aside. Blood is thicker than water, but maple syrup is thicker than blood! So technically pancakes with maple syrup are more important than family!😂 WE ALL LOVE PANCAKES! And if you don't like them, you just haven't had good ones yet! This recipe will make you love pancakes even more than ever! PS: I didnt even know that was possible. Ingredients: 2 and a 1/2 cups all purpose flour. 2 Tbsp salt. 3 Tbsp sugar. 2 tsp baking powder. 2 tsp baking soda. 2 eggs. 2 and a 1/2 cup Buttermilk or: 2 and a 1/2 cups whole milk and 2 Tbsp lime juice. 2 tsp vanilla extract. 1 stick of butter (1/2 cup or 115 g). Dry Ingredients: To a bowl, add the flour sifted, baking powder, baking soda, sugar and salt. Whisk them together. Traditionally , Pesto Pasta is made with Italian basil, Parmesan cheese and pine nuts! Since it's a little difficult to get these ingredients at times, this recipe shows you how switching the core ingredients with similar ingredients can still give you an equally delicious dish! This one uses Spinach, processed cheese and peanuts! Makes for 2 people! Ingredients: A bunch of spinach. 4 cloves of garlic smashed. A handful of roasted peanuts. 1/4 cup cilantro/ coriander leaves chopped finely. 1 green chilly finely chopped. 1/4 cup olive oil. 1 tablespoon of butter. Parmesan cheese/ processed cheese/any cheese. Any short dried pasta (Penne, Macaraoni, fusilli, etc...) 200g Pasta: This recipe involves Penne pasta, BUT you could really use any short pasta with gaps in them( if you don't have any, you could also use spaghetti! Recipe⬇️ Dry Ingredients: All purpose flour. Baking powder. Baking soda. Dry ginger powder. Cinnamon powder. Candied ginger* not required Walnuts* any nuts will do To a dish add 250g of all purpose flour, 1 and a 1/2 teaspoon of baking powder, 1 teaspoon of baking soda, 1 and a 1/2 teaspoon of dry ginger powder, 1 teaspoon of cinnamon powder, a few chopped candied ginger pieces, 1 teaspoon of salt, 1/2 cup of chopped walnuts. Any nuts could be used, but for best results, use walnuts. Stir them together. Line a baking pan with some oil and place a cut piece of parchment paper at the bottom to stick. Add a few more drops of oil on the paper and around the sides too. (You could use only oil but preferably stick to a parchment paper) Wet Ingredients: 3 whole eggs. Brown sugar. Vegetable oil. To another dish, crack three whole eggs and whisk them for 2 minutes. To that add 175g of brown sugar and whisk them for 3 minutes. Now, add 3/4 cup or 200ml of vegetable o

Just imagine, an explosion 💥💣 of pizza flavours in one small sphere! Oh, not much to say except they're Amazing Recipe: Ingredients: All purpose flour Oregano. Olive oil. Milk. Baking powder. Cheese cubes. Pizza sauce/ hot sauce. Green chilly* not req Spring onions* Garlic butter/ butter with chopped garlic. Make a dough of all purpose flour (1&1/2 cup), 3 tablespoons of oregano, salt, 2 tablespoons of olive oil, 1/2 cup of milk, 1 table spoon of baking powder and let rest. Take a baking pan, coat it with some oil. To that add a few big dollops of pizza sauce or hot sauce and make a thick layer. The recipe makes 15 cheese bombs! Take a small ball of the dough and flatten it a bit. Add a quarter of a cheese cube, a few cut spring onions, 2-3 slices of green chillies, a sprinkle of salt and wrap it up to make a small ball. Ingredients: 3-4 eggs. Garlic cloves. 3 onions. 3 green chillies. 3-4 tomatoes. Handful of cashew nuts. Spices: cinnamon bark, elaichi pods, cumin, star anise, peppercorns. Chilly, turmeric, coriander, cumin powders. Garam masala. Ginger garlic paste. Coriander leaves. Recipe below ⬇️ This flavoursome recipe of a hyderabadi egg curry does require a bit of work but it tastes Amazing, featuring a balance between strong spices, tanginess and creaminess too! You could easily swap the eggs with mushrooms, paneer, chicken or anything of your choice. Best served with rice/ naan, it also goes well with chapathis or naans too! Dum Biryani is a one-pot dish of aromatic spices and delightful flavours - a result from slow cooking the ingredients in a sealed, heavy bottomed vessel for hours or even overnight in certain cases. Biryani is often served with raita, a loose youghurt with onions and cilantro! This version of Vegetable Dim Biryani is easier and a home cook friendly one :) The vegetables can be easily switched with mutton or even chicken pieces!    With recipe! What is Ravioli? Ravioli is a type of pasta comprising of a filling enveloped in thin pasta dough. Usually served in a broth or with a sauce, they originated as a traditional food in Italian cuisine. This is one is almost vegetarian, as it only uses eggs. Although they may be a little tedious to make, it's very satisfying to see how they turn out and mind it, they are DE-LICIOUS! Ingredients could be swapped out very easily according to your liking! :) Ingredients: Mushrooms 1 and a 1/2 cup. 2 onions. Garlic pods. Green chillies. Olive oil* Chives or coriander leaves.
